Once you figure out which seats you want, just call Air China and they can do your seat allocation on the phone.

I'm sure there's a way to do it online but it may not be worth the brain damage trying to figure it out. I find their web site more user friendly than Air China's web site itself. Their seat maps are updated in real time so you can do a dummy booking and immediately see what is available for your flight and the type of aircraft being used. The easiest and best way I have found to see what seats are available and details on the aircraft (type, layout of seats) for Air China is Expedia.
